The role:

Global Talent 2020 are proudly working with one world’s leading Hotel brand at their stylish, 5-star venue in the bustling city of Edinburgh. The brand has a renowned reputation in the market for its luxury products, and as being a fantastic employer to work for. 

Set in a prime city location our client is looking for a passionate Executive Head Chef for their quality focused food operations. It is leading a close dedicated Kitchen brigade, producing high end popular food services, to a two-rosette level. This will be across the main restaurant, and bar areas of this luxury Hotel. There will also be leading a very large, and infamous C&E operation that the Executive Head Chef will work with the Executive Sous and other HOD’s, to maintain its reputation, further grow, and attract future customers.

The Executive Head Chef will also have a kitchen befitting the rest of the property, delivering seasonal produce to high end fine dining Restaurant standards, across Breakfast, Lunch, and Dinner services, whilst utilising both classical, and modern culinary methods to achieve this with the diverse team.

The person:

Our quality focused global client at Global Talent 2020, is looking for an experienced Executive Head Chef talent, or established Head Chef candidate, who must be approachable at all times, possess a positive out-going friendly personality, as at times they will be very guest facing. You must exhibit a “can-do” mentality, whilst being a strong fair leader, to encourage a brigade of young developing chefs.

As Executive Head Chef you will be responsible for the whole kitchen budget, managing Food GP %, stock, rotas, recruitment, training and development, menu planning, Health and Safety, Food Hygiene, COSHH, HACCP, brand standards, all other local, legal, and legislative requirements, as required.

The ideal Executive Head Chef candidate must have had prior experience of working in a busy, large, quality food led venue, specifically with 4/or 5-star Hotel experience, or similar. You must be able to demonstrate good all-round classic/modern culinary technical skills to a minimum two rosette levels, whilst being willing to grow, train and develop the rest of the brigade with this luxury branded organisation.
